Recipe 1: Double Boil Bird's Nest with Rock Sugar

Nourishes the lungs and aids elimination of phlegm & cough.
Preparation:
1. Soak birds’ nest in potable water for minimum 8 hours.
2. Rinse with water and drain.
3. Double boil in clean hot water under medium heat for 45 min.
4. Add Rock Sugar according to preference and double boil for another 10 min hour.
To Serve Cold
5. Refrigerate the cooked birds’ nest after leaving it to cool.
6. Serve when chilled.
For added nourishment, add some:
1. Almonds; or
2. Apricot Kernels; or
3. Gingko Nuts; or
4. Longan Flesh; or
5. Lotus Seeds; or
6. Red Dates.
